Nethili (Anchovy)

Nethili varuval | Anchovy Fries is my favourite snack and side dish when it comes to fish. I love this fish because it does not have a strong smell like other fish types. The best thing about Anchovies is that they are available on all the coastal areas in the world. Here is my favourite recipe Nethili Varuval or Anchovy Fries.

You need only 7 ingredients and oil to make this recipe. Wash the Anchovies, marinate them and fry. How simple is that?

Nethili Varuval | Anchovy Fries Ingredients

2 tbsp      Rice Flour
1/4 tsp    Turmeric (Optional)
2 tbsp      Chickpea Flour
1 tbsp      Red Chilli Powder (you can increase or decrease if you want)
1tbsp       Ginger Garlic Paste
1 tbsp      Pepper Powder (Or less if you want)
Salt to taste
Oil to fry

Nethili Varuval or Anchovy Fries. A nice evening Snacks for seafood lovers. In Tamil it is called as ‘Nethili Meen Varuval’.
Nethili | Anchovy
Anchovy washed and strained excess water.
Anchovy Fry Ingredients
Starting from the left rice flour, chickpea flour, red chilli powder, ginger garlic paste, black peppercorn powder and salt at the top. I did not show turmeric as it is optional. You can add or skip turmeric powder. Turmeric powder is good in neutralizing the scent of the fish.
Add Ginger Garlic
Add the ginger garlic paste.
Add Turmeric Powder
Add turmeric powder to neutralize the scent or you can skip it. It is optional.
Add Chilli and Salt
Combine Salt and Red Chilli powder and add to the fish.
6 Add Crushed Pepper
Add black pepper powder as needed. If you think adding pepper powder will be too hot for you, then you can reduce the quantity or skip it.
Chikpea and Rice Flour
Chickpea and rice flour act as the binding agents for the marinate. These two help to keep the marinate intact with the fish. Hence when frying, the marinate will not separate from the fish.
Mix Chikpea and Rice Flour
Combine the equal quantities of chickpea and rice flour.
Add Mixed Flour
Add the chickpea and rice flour combination to the fish.
Mix Gently and Blend Nicely
Start blending the ingredients and gently handle the fish. Anchovies are too soft and they may break.
Marinated for 10 Minutes
Let this mixture sit for 10 minutes and then ready to fry.
Heat Oil
Heat 2 to 3 tablespoons of oil and let it be hot. I prefer using Mud pan as it gives a good muddy smell. You can use your regular pan.
Fry the Fish
This is my favourite step. I love to fry the fish. Let’s fry until golden brown.
Fry in Medium Heat
Reduce the heat to medium and fry until golden brown. You can add as many numbers of fish at a time and add more oil.
Cook Until Golden Brown
Flip the fish to cook the other side.
Nethili Meen Fry Ready
Garnish with coriander leaves and serve hot with any chutney or tomato sauce.

You may also like to:

  • add more marination to cover the fish completely and deep fry with more oil to make the fish crispy that it pops in your mouth with every bite you take; and
  • dip the marinated fish in the beaten eggs, take it out and dust them with bread crumbs to make it more flavourful and crispy.
